
Let this no-waste Thanksgiving day turkey stock simmer while your turkey is in the oven. You’ll definitely want to have this on hand for the big day. It is so flavorful and you have to love a good no waste recipe!
What you’ll need
a pot with a well fitting lid
the neck and giblets of a turkey
3 carrots
3 stalks of celery
2 onions
5 cloves of garlic
2 bay leaves
4 sprigs of thyme
water
salt and pepper
(vegetable kitchen scraps)
How to make turkey stock for Thanksgiving
Ready for the simplest recipe ever?! You can barely call this a recipe really…
First add the vegetables into the pot. Just roughly chop the carrots and celery. Cut the onions into quarters and drop the garlic cloves in whole. No need to peel anything or remove the onion and garlic skins. The skins give flavor and color and they are full of nutrients. It’s also a great time to toss in any vegetable kitchen scraps you might have.

Next add the turkey neck and giblets to the pot. and cover the contents with water.
Toss in the herbs and sprinkle some salt and pepper in.
- I generally season my stocks lightly with salt and pepper. I find that this makes the broth more versatile when I go to use it later.
Then turn the heat to medium-high and cover it with a well fitting lid.
The trick to a beautiful CLEAR turkey stock
The trick to a beautiful clear broth of any kind is to never let it boil. Just before the water starts to boil turn the heat down to low and let it simmer away.
Simmer the stock for at least 1 hour, but the longer the better. I like to put my Thanksgiving day turkey stock on the stove right after my turkey goes into the oven. I let it simmer while my turkey cooks. Then when its time to make gravy, I have everything I need!
Strain your turkey stock
The last thing to do is to strain off the turkey stock. Run the golden broth through a fine sieve and discard everything else.
Allow the turkey stock to cool and store it in an airtight container (like a mason jar) in the refrigerator or you can lay it flat in freezer safe zip lock bags to save in the freezer.

Turkey Stock for Thanksgiving Day

Ingredients
- the neck and giblets of a turkey
- 3 carrots
- 3 stalks of celery
- 2 onions
- 5 cloves of garlic
- 2 bay leaves

- water
- salt and papper
- (vegetable kitchen scraps)
Instructions
- Roughly chop the vegetables leaving the peels and skins on.
- Place the vegetables and the turkey neck and giblets into a pot.
- Cover with water.
- Add herbs and lightly season with salt and pepper.
- Turn to medium-high heat, but reduce heat to low just before the boiling point.
- Continue to simmer to ensure a clear broth.
- Simmer for at least 1 hr. Up to 3 hours.
- Strain through a fine sieve.
- Allow to cool and store in an airtight container in the refrigerator,
- To store in the freezer, place the broth in a freezer safe zip lock bag and lay flat to freeze.
