These mildly sweet, simple vanilla scones are elegant enough for afternoon tea or a ladies’ luncheon, but quick enough for a school-day breakfast. You need this in your recipe box!
What you’ll need
Scones:
2 cups flour
1/3 cups sugar
1/8 tsp salt
2 1/2 tsp baking powder
4 Tbsp cold butter
1/2 cups milk
1 egg
2 tsp vanilla
Glaze:
1 cup powdered sugar
1 tsp vanilla
4 tsp milk
baking sheet
parchment paper
How to make Simple Vanilla Scones
First to bake the scones:
Preheat the oven to 425° F. Then combine flour, sugar, baking powder, and salt in a large bowl.
Making sure your butter is very cold, cut in the butter until the mixture has pea sized pieces and set it aside.
In a separate bowl, mix the wet ingredients. Milk, vanilla, and egg.
Next, stir the wet ingredients into the dry ingredients. No need to over-mix.
Turn the dough out onto a lightly floured surface and form the dough into 2 disks.
Then cut each disk into 8 triangles, forming mini scones.
- You can also make these full sized by forming the dough into only 1 disk and cutting it into 8 triangles. You’ll just need to adjust the cook time by adding 2 minutes and keeping a close eye.
Transfer the scones to a parchment lined baking sheet leaving about 2 inches between each scone.
Bake at 425° F for 8-10 minutes.
When they’re all finished, cool the scones on a wire rack for about 10 minutes before adding the glaze.
And now the Glaze:
Measure the powdered sugar into a bowl. Add the vanilla and 3tsp of milk, whisking until smooth. If you would like a thinner consistency for your glaze, you can always add another tsp of milk.
When the scones are cool, drizzle the glaze right on top! YUM!
How to make them ahead of time
One of my favorite tricks is to make these simple vanilla scones ahead of time!! After your form the dough into disks, simply wrap them in plastic wrap and place them in the refrigerator over night. When you’re ready to bake, preheat your oven, cut them into disks, and bake as usual. You’ll be an absolute hero!
Flavor Variations
- Add any berry to this scone for a delicious variation.
- Lemon or orange are also great additions. Use the zest and about 2 tsp of juice. You can adjust the liquid in the recipe by taking out 2ish tsp of milk.
- You can also substitute the vanilla for almond extract and add slivered or sliced almonds to the batter and sprinkle them into the glaze. Delicious!
