What You’ll Need

3 eggs
1/4 cup melted butter
1 tsp vanilla extract
1 1/2 cup almond milk
1/2 cup applesauce (unsweetened)
2 1/2 cups of old fashioned oats
2 Tbs almond flour
1/2 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg
1/3 cup brown sugar
1 tsp baking powder
How to Make Simple and Versatile Baked Oatmeal
If you are planning to bake your oatmeal right away, preheat your oven to 350° F and grease an 8×8 inch baking pan.

How is this for simple?! First, mix the wet ingredients and then add the dry!

Stir until well combined. You can bake right away for 35-40 minutes and let it cool for 15 minutes before serving or…. my favorite way…

Cover and let it sit in the refrigerator over night.

The next morning, preheat your oven to 350° and pour the batter into a greased 8×8 inch baking dish. Bake for 35-40 minutes.

Let it cool for 15 minutes and serve warm. This dish can absolutely stand alone. It doesn’t need syrup or any extra sweetness, but if you’re feeling indulgent, drizzle a little cream over the top or add a dollop of whipped cream. YUM! It’s sure to be a family favorite!

Tips
The ingredients listed are what I use most often; however, I do find that the baked oatmeal has a more crumbly outcome when I use almond flour. Totally fine if you’re going to eat it out of a bowl and I love that everyone gets some extra protein! But if you want to take it on-the-go, you may want to use all purpose flour instead.
You can use coconut oil instead of butter if you prefer!
Use whatever milk you like. Almond, Cashew, Oat, Whole milk, 2%, coconut, or goat’s milk are all great options and the taste will only vary slightly.
Variations
Simple Baked Oatmeal with add-ins
Follow the instructions above. Add any combination of dried fruit and nuts you like! About 1/2 cup of each. You could try raisins and pecans or chopped dried apricots and slivered almonds. Experiment and find your favorite!
Apple and Cinnamon Baked Oatmeal
Delicious! Follow the instructions above and add 1 large diced apple. I like Granny Smith, but use whatever apple you like to eat. Also really yummy with 1/4-1/2 cup of sliced almonds for some crunch!
Baked Oatmeal with Spiced Pears
Follow the instructions above but add 1 large diced pear, 1/4 teaspoon ground ginger and 1/8 teaspoon ground cloves. Use only 1/8 tsp of nutmeg. Chopped hazelnuts are an amazing addition to this one too!! Sliced almonds also work well.
Baked Pumpkin Oatmeal
Follow the instructions above, but use pumpkin puree instead of applesauce and increase the brown sugar to 1/2 cup to compensate for the sweetness lost. I would also include 1/4 tsp of ground cloves and 1/8 tsp of ground ginger.
How to Store Simple and Versatile Baked Oatmeal
IF you have any left over you can store it in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
If you would like to make ahead and save it in the freezer for a quick breakfast, you have 2 options. You can either cut it into squares and freeze on a flat surface for 30 minutes before transferring to your storage container, or bake it in muffin tins (be sure to adjust the cook time).
To Reheat
You can thaw individual servings in the refrigerator overnight or microwave them as desired!

Notes
You can substitute coconut oil for the butter and use any like you like.
For a firmer texture that is great for on-the-go breakfasts, use all purpose flour instead of almond flour.
