
Ready for maybe the fastest and smoothest Chocolate Zucchini Muffin ever? This is it. The batter comes together in less than 10 minutes so they’re great for busy moms and the kiddos will love them!
What you’ll need
2 c flour
1/2 c cocoa powder
1/4 c granulated sugar
1/4 c brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 c milk
1 large zucchini
5 Tbsp melted butter
1 tsp vanilla
1 egg
1 c semi sweet chocolate chips
muffin tins (like these)
muffin liners (like these)
How to make Quick Chocolate Zucchini Muffins
First things first… preheat the oven to 375° F.
In a large bowl, mix all the dry ingredients… Flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt… all into a the bowl and whisk.
Now this is what makes the matter smooth instead of textured like a typical zucchini muffin… Place milk and roughly chopped zucchini into a blender and blend it up.
Then, when the milk/zucchini mixture is smooth, add the egg and vanilla to the blender and give it a quick mix.
Next add the blended ingredients and melted butter to the dry ingredients. Mix well.
The last step is to stir in the chocolate chips. I said 1 cup, but feel free to measure with your heart. I do!!
Finally, spoon the batter into lined or greased muffin tins and bake at 375° F for 20-25mins.
Allow the muffins to cool for at least 10mins before serving.
Notes
- Make them mini! but watch your cook time. I recommend starting your timer at 10 minutes and adding more time if needed. You’ll know they’re ready when an inserted toothpick comes out clean.
- Using an ice cream scoop to fill your tins will result in more uniform muffins.
- Use whatever milk and sugar you prefer. This is a forgiving recipe.
- Instead of blending the ingredients, you can grate the zucchini and stir it in for a more traditional feel. I blend for a smooth batter because my babies prefer it that way, but they’re delicious either way!
