
This classic turkey gravy is the only gravy recipe you’ll need. It is perfect for Thanksgiving, but can be easily adapted for any other type of meat or even to be vegetarian!

If you are in the planning stages for your Thanksgiving meal, be sure to see my Turkey Stock for Thanksgiving Day. It is the perfect ingredient to ensure a flavorful gravy. If you didn’t make a turkey stock, not to worry. You can use a store bought chicken broth or vegetable broth instead!
Now you can make gravy with or without drippings. Sometimes when you cook a turkey there aren’t many drippings available. Or perhaps they’re difficult to retrieve because the turkey was cooked in a throw-away pan. Totally fine! This gravy will be delicious either way!
It is difficult to say how much of each ingredient you will need for this because it depends on how many people you’re feeding and the volume of your turkey drippings. This post will be more of a guideline than a recipe, but don’t let that scare you. We’ve got this!!
How to make classic turkey gravy

If you do have turkey drippings, strain them through a sieve and set them aside.
Next make a roux but putting equal parts olive oil and flour into a pot.
- If you are serving 10 people, try starting with about 4 Tbsp olive oil and 4 Tbsp flour.
- You can always add more broth to thin the gravy, but its a little harder to thicken it after the fact. (You can do it. I’ll leave a note at the bottom in case you find yourself with that dilemma.)

Whisk them together before turning on the heat.
When the oil and flour are completely combined it is time to turn the heat on to medium.

Allow the four to cook, being sure to move it around in the pot so it doesn’t burn.
Next add the drippings slowly. Whisk continuously to achieve the smooth texture that everyone loves!

When the drippings have been whisked in, start ladling in turkey stock. Again whisk continuously.
Continue adding stock until you reach the consistency you like!

Ingredients
- 3 Tbsp oilve oil
- 3 Tbsp flour
- turkey drippings
- turkey stock
Instructions
1. If you choose to use the turkey drippings, pour them through a sieve and reserve them.
2. Before turning on the heat, whisk the olive oil and flour together in a pot.
3. Now turn on the heat and cook the flour mixture for about 5 minutes being sure to move the contents continually so they do not clump or burn.
4. If you reserved drippings, add them to the pot whisking continuously to create a smooth consistency.
5. Ladel in turkey stock, again whisking continuously, until you reach the consistency you like.
6. Taste for salt and pepper and adjust if necessary.
