
These Carrot and Apple Muffins are a favorite in my house. They’re light and fluffy and sweetened with mostly applesauce. Perfect for make-ahead breakfasts or snacks!
Here we go… a very quick and to-the-point recipe!! Gather your ingredients and preheat your oven because these come together very quickly.
Ingredients
1/2 C butter
1/2 C sugar
2 eggs
3/4 C unsweetened apple sauce
1 3/4 C flour
1 Tbsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
1 grated apple
1 large grated carrot
The Process
Start by preheat the oven to 350° F.
First, go ahead and grate the apple and carrot to have them ready to go. There is no need to squeeze out the liquid.
Next, cream the butter and sugar together and then beat in eggs. Beat until the mixture is light in color and fluffy in texture.
Add and mix in the applesauce.
Finally add in the dry ingredients. Flour, baking powder, cinnamon, and salt and mix just until combined. Careful not to over mix.
Lastly, fold in the grated carrot and apple.
Spoon into lined or greased muffin tins.
Bake for 12-15 minutes or until an inserted toothpick comes out clean.
Cool at least 10 minutes before serving. The cooler they are, the easier it will be to remove the muffin liner.
Tips and Substitutions
Store your carrot and apple muffins in an airtight container.
For only an apple muffin, just leave out the grated carrot. Easy!
These muffins freeze beautifully! To defrost, you can leave them in the refrigerator over night, or place them on your counter top for about 20 minutes (obviously the timing depends on the temperature of your house).
For a gluten free version, substitute 1 1/2 C oat flour and 1/4 C almond flour for the all purpose flour suggested. The consistency will not be as fluffy. Your gluten free carrot and apple muffins will be more dense and moist; however, the end result is equally as delicious!

9. Cool 10 minutes before serving.
