Lactation Cookies for EVERYONE!
Though they are ‘lactation cookies’, these are totally fine for the whole family to enjoy. However, if you want to make sure these cookies are just for mama, you have the perfect excuse. *wink wink
What You’ll Need
1/2 C butter
1/2 C coconut oil
1 1/2 C brown sugar
2 eggs
2 tsp vanilla extract
1 1/2 C flour
5 Tbsp brewers yeast
4 Tbsp ground flaxseed
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
3 C old fashioned rolled oats
1 1/2 C chocolate chips (I like semi sweet)
How to make Lactation Cookies
Preheat your oven to 350° F.
Cream the butter, coconut oil, and sugar together. Then add eggs and vanilla and mix until combined.

Add flour, flax, brewers yeast, salt, cinnamon, baking powder, baking soda, and salt. I like to give my dry ingredients a little half-stir right on top of the wet ingredients before combining. This is definitely not “best practice”, but its how I do it… I’m a busy mama and I like fewer dishes.
If you are interested.. this is the brewers yeast that I use.


So try my half-stir if you would like, otherwise you can mix the dry ingredients in a separate bowl before adding them to the dry ingredients. Then stir stir stir!

Lastly, add your oats and chocolate chips! YUM

You can shape these into balls or just drop them right onto the cookie sheet lined with parchment paper about 2 inches apart. I like to use a little ice cream scoop so that my cookies are all the same size.

Bake them in a 350° F oven for 10-13mins. Cool on a wire rack.

Here is my trick for always having freshly baked cookies…
When I make these at home I almost always make a double batch. I bake only as many cookies as I want my family to eat that day and then I freeze the rest of the dough. Next time we want cookies I can pull my ready made cookie dough right from the freezer. Huge time saver and it makes my feel like Super Mom!!
Freezing Lactation Cookie Dough
Form the rest of the dough into balls and place them on another lined cookie sheet or freezer safe dish. You don’t need any space between the cookies as you would if you were going to bake them. Just pack as many as you can onto your dish.

Place the formed cookie dough into the freezer for at least 10 minutes.

After about 10 minutes you can transfer them into a freezer safe bag or whatever you plan to store them in.
Tip: Be sure to label your cookies and write whatever instructions you need directly on the bag.
When you go to bake these from the freezer, just add about 2 minutes to the cook time!

Instructions
1. Preheat your oven to 350° F.
2. Place the flour, brewers yeast, ground flaxseed, baking powder, baking soda, and salt in mixing bowl. Stir to combine and set it aside.
3. In a large mixing bowl, cream your butter, coconut oil, and brown sugar together.
4. Stir in eggs and vanilla.
5. Add dry ingredients to the wet ingredients and mix.
6. Stir in oats and chocolate.
7. Form the dough into balls and place them about 2 inches apart on a parchment-lined baking sheet.
8. Bake for 10-13 minutes.
9. Let the cookies cool for 10 minutes before eating.
Notes
Freeze the dough in preformed balls for 10 minutes before placing them into a freezer safe bag.
When you bakew cookies from frozen dough add about 2 minutes to the cook time.
