If you’re looking for a super simple way to bring some Easter spirit into your home, try this Easter themed food. These meal (or snack) ideas are so quick and easy, and healthy too!

Breakfast Ideas

Sprinkled Oatmeal
Its exactly what it sounds like… oatmeal, but with sprinkles!
Oatmeal is a staple in our house. We make it for the kids a a few times each week, but it isn’t very exciting. Though my kids love to have the flavored packets when they visit their grandparents, at home we make stove top oatmeal and sweeten it with a little bit of brown sugar or honey. Nothing fancy.
Tossing a few sprinkles on top makes all the difference! The kids get excited and start the day feeling festive, but I know its just a regular bowl of oatmeal that still has less sugar in it than the prepackaged servings.
A perfect for busy mornings, it takes no extra time and they leave the table with smiles and full tummies!

Carrot and Apple Muffins
These muffins very versatile. The recipe calls for all purpose flour, but can easily be made gluten free by using a combination of oat and almond flour. The results are equally as delicious! Even better… they’re mostly sweetened with applesauce! Serve it with a hard boiled egg and you have a well balanced breakfast!

Breakfast Popsicles
What?!!! Popsicles for breakfast?!!! YES!!! Yogurt popsicles. All you need is a popsicle mold and your favorite yogurt. For these I used a tiny bit of food coloring to tint the yogurt and put some Easter sprinkles in the mold before filling and freezing. Another easy, quick, and healthy (depending on your choice of yogurt *wink) option to enjoy!
Lunch Ideas

Easter (or Garden) Themed Sandwiches
If you have a few Easter cookie cutters, you can easily pull off this themed lunch even on the busiest day.
I know that little carrot looks like a cookie, but it isn’t. Its a turkey sandwich! The top is decorates with colored cream cheese for an extra special surprise. Those little flowers are actually peppers and cucumbers in hummus soil. And the Easter eggs are filled with blueberries and yogurt covered pretzels.
Pro Tip- use different cookie cutters for themed sandwiches all year long!

Easter Egg Charcuterie
I LOVE a good charcuterie board and my kiddos are no different. So simple, but may take a tiny bit more time…
Just grab an old egg carton, place half of a plastic Easter egg in each space, and fill them with some favorite snacks! Easy and FUN!! Who wouldn’t want to eat lunch (or even dinner) this way?!

Easter Sugar Cookies
Now, this is not a meal, but here is a bonus treat idea.
My sugar cookie recipe will be coming to the blog soon, but in the mean time, pick your favorite sugar cookie or shortbread cookie recipe (or if you’re in a hurry, you can always buy some). Mix up some Royal Icing, but rather than piping a design and waiting for the icing to fully dry, just dip the cookie directly in! Place them on a cooling rack and add some sprinkles!
This is a great activity to do with little helpers!
Carrot and Apple Muffins
Ingredients
- 1/2 C butter
- 1/2 C sugar
- 2 eggs
- 3/4 C unsweetened apple sauce
- 1 3/4 C flour
- 1 Tbsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 grated apple
- 1 large grated carrot
Instructions
1. Preheat your oven to 350° F.
2. Beat the butter and sugar together.
3. Beat in eggs until fluffy.
4. Mix in applesauce.
5. Add the flour, baking powder, cinnamon, salt and mix until combined.
6. Stir in the carrot and apple.
7. Spoon into lined or greased muffin tins.
8. Bake for 12-15 minutes or until a toothpick comes out clean.
9. Cool 10 minutes before serving.
Notes
Store in airtight container.
These muffins freeze beautifully!
For a gluten free version, substitute 1 1/2 C oat flour and 1/4 C almond flour for the all purpose flour suggested. The consistency will not be as fluffy, but equally as delicious!
